« Quick Roasted Red Pepper Hummus »

  • 6 ounces of jarred roasted red peppers, drained (regular or fire-roasted)
  • 1 garlic clove, smashed
  • 1 Tbsp. fresh lemon juice
  • 8 oz. of prepared hummus spread (recommended: Tribe Classic)
  • 1/8 teaspoon red pepper flakes
  • Coarse salt and freshly ground black pepper, to taste
  • 3 Tbsp. parsley, chopped

In a food processor, pulse peppers, garlic clove and lemon juice just until blended.  Add in hummus spread, red pepper flakes, salt and pepper and process until smooth and evenly red in color. Transfer to a bowl and garnish with parsley. Serve with chips or vegetables of choice.
