« Quick Marinara Sauce »

  • 1 small onion
  • 4 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • Salt & Pepper to taste
  • Crushed red pepper flakes (to taste - start with 1/4 tsp.)
  • 28 oz. can crushed tomatoes
  • 1/4 cup of dry red wine such as Chianti
  • 1/4 tsp. dried oregano
  • 1 Tbsp. fresh basil, chopped
  • 1 Tbsp. fresh parsley, chopped

Gently saute onion and garlic in olive oil (about 5-6 minutes). Season with salt, pepper and red pepper flakes.  Add crushed tomatoes, red wine, oregano, basil and parsley.  Taste for seasoning and adjust salt and pepper accordingly.  Simmer on low to medium heat for 10-15 minutes.
