Quick Marinara Sauce, recipe follows

1 (15 oz) can of red clam sauce

1 lb. of mussels, cleaned

1/2 lb. of squid (tentacles & bodies), cleaned and bodies cut into rings

1/2 lb. of raw shrimp with tails off

4 garlic cloves, chopped

4 Tablespoons olive oil

1 lb. cooked linguini (al dente)

2 Tablespoons Italian flat leaf parsley, chopped 

Fresh cracked black pepper

Clean mussels, squid and shrimp under cold water.  Discard any mussels that are open.

Heat olive oil in large pan and briefly saute garlic (do not brown).  Add squid and mussels, sauteing for 2-3 minutes.  Add shrimp, clam sauce and marinara.  Briefly cover and saute until mussels open (about 3-4 minutes).  Toss sauce with cooked linguini and mound onto a large warm serving bowl or platter.  

Garnish with black pepper, fresh parsley and/or lemon wedges.

Quick Marinara Sauce

  • 1 small onion
  • 4 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • Salt & Pepper to taste
  • Crushed red pepper flakes (to taste - start with 1/4 tsp.)
  • 28 oz. can crushed tomatoes
  • 1/4 cup of dry red wine such as Chianti
  • 1/4 tsp. dried oregano
  • 1 Tbsp. fresh basil, chopped
  • 1 Tbsp. fresh parsley, chopped

Gently saute onion and garlic in olive oil (about 5-6 minutes). Season with salt, pepper and red pepper flakes.  Add crushed tomatoes, red wine, oregano, basil and parsley.  Taste for seasoning and adjust salt and pepper accordingly.  Simmer on low to medium heat for 10-15 minutes.
